Redbones is a Somerville landmark. This is a GM role for an operator who can hold culture, volume, and hospitality at the same time — not a corporate playbook install, a true independent restaurant.
What you'll own
- Full P&L ownership: sales, labor, COGS, guest recovery
- Lead FOH and BOH managers; hire, coach, and hold the floor
- Protect the brand's neighborhood reputation while tightening systems
- Own scheduling, inventory cadence, and weekly flash with ownership
What you bring
- GM experience in independent or high-volume full-service
- Comfortable with a bar-forward, high-energy restaurant
- Track record of building a bench, not just covering shifts
